Aunt Annie's Favorite Recipe for Apple Coffee Cake

* Preheat oven 350 degrees
* grease and flour pan(s)

Ingredients

- Dash of Salt
- 2 Cups Flour
- 2 Cups Sugar
- 2 teaspoons Cinnamon
- 2 teaspoons Baking Soda
- 2 teaspoons Vanilla
- 3 Eggs
- 1/2 Cup Oil
- 4 Cups Apples
(Apples must be chopped in VERY SMALL chunks)

Directions

Preheat Oven to 350 degrees

DO NOT OVER MIX after adding the Apples -
it is best to put other ingredients together,
combine well then add the apples and stir
by hand just until apples are covered by mixture.
The more you mix, the wetter the cake will become.
As the apples cook, moisture is added and it
all comes out very nice.

** bake about 45 minutes if using a 9 by 13 cake pan
** bake about 30 minutes if using two 8 by 10 pans - this works better for me
